Triple Chocolate Chunk Muffin ( healthy style )


heathy fun yummy snack :)

1 3/4 c oats
3 egg whites
3/4 cup unsweetened cocoa
1/2 cup unsweetened applesauce
1 tsp vanilla extract
1/2 cup plain Greek Yogurt
1/2 tsp cream of tartar
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/4 tsp salt
1 cup hot water
1 cup sugar substitute  ( or real sugar)
1/2 cup semi-sweet chocolate chips or any other type of chips.


Preheat oven to 350 degrees. Line muffin pans with foil or cooking spray.
In a blender, mix all of the ingredients together except for the chocolate chips. Blend until oats are ground and mixture is smooth. 
Place mixture in a bowl and gently stir in 1/2 of the chocolate chips. school mixture int o muffin tins. Place muffins in to the often for 10 minutes. After ten minutes, remove from the oven and distribute the other half of the chocolate chips. then put back into oven for another 2-5 minutes. 
Take out and enjoy!

* 58 calories per muffin!

Sweet potato Soup

2 C. mashed sweet potatoes
1 ½ C. chicken or turkey broth
1 C. heavy cream or half-and-half
Ground nutmeg

In blender, puree sweet potatoes, broth and cream until smooth. Transfer to saucepan; heat over low heat. Season to taste with salt and nutmeg.

Fruit smoothie and toast


This is such an awesome snack to have. Healthy and delicious!

1 cup fat-free milk
1/2 frozen banana or 1/2 c frozen mango slices
1 tsp sugar 
1 cup frozen fruit of your choice

mix the milk, banana, sugar and frozen fruit in a blender until smooth. 

Then take a piece of bread and toast it and cut it into slices. take the slices and dip it into the smoothie. . ENJOY!

German Pancakes



This is a recipe my family has used for as long as i can remember. Such a great breakfast!

3 eggs( beaten)
1/2 c flour
1/2 c milk
1/4 tsp salt


Beat all ingredients together. Preheat oven to 450 F. Put about 3 Tblspns butter in a 9x12 '' pan until it melts. Pour batter into pan-don't stir-. cook for 10- 15 minutes or until the sides of the pancakes are up over the pan and cooked.

whole wheat bread


yields 2 loaves
Prep time: 20 minutes active time 
plus 3 hours to proof. 
cooking time : 25-35 minutes. 



1/4 cup warm water
1 tsp brown sugar
2 pkgs (4 1/2 tsp) active dry yeast
1 cup milk
3/4 cup warm water 
1/8-1/4 cup honey
1/8-1/4 cup unsulphured molasses  or 3/4 cup brown sugar
1/4 cup melted butter or oil
1 egg
1tbsp lemon juice
1 cup grains ( oats, bran, flax...)
2 tsp salt
5 1/2 cup whole wheat flour


1. Proof Yeast: Mix sugar and yeast in a bowl. pour warm water over and allow to rest for 10 minutes
2. in a large bowl, mix milk, water, honey molasses,oil. egg and lemon juice. 
3. add yeast mix to molasses mix and stir to combine. Add 2 1/2 cups of the flower , the grains. Stir and rest for 20 minutes. 
4. In a small bowl combine remaining flour and salt. Stir into dough. On a floured surface, knead 10-15 minutes or until smooth and elastic. You may need to add additional flour as you go to keep from it sticking. 
5. put dough into a greased bowl, cover with damp cloth and let rise for one hour in a warm place. 
6. Punch dough and allow to stand for 20 minutes.
7. Remove from bowl, cut into tow. shape into loaves. place in greased loaf pans and cover with damp cloth. Allow to rise until doubled in size. ( approximately 1 1/2 hours)
8. Bake at 375 F  for 25-35 minutes or until bread is golden brown.

Whole Wheat Pancakes.

1/2 cup skim milk
1 egg white
2 tsp. safflower oil ( vegetable oil works too)
1/2 tsp. vanilla
1/4 cup all purpose flour
1/4 cup whole wheat flower
2 1/2 tsp. sugar
1 tsp baking powder
1/8 tsp salt 
1 cup strawberries

Combine milk, egg white, 1 tsp oil and vanilla until blended. Add flours, 1 1/2 tsp sugar, baking powder and salt; beat until lumps disappear. Lightly grease griddle with oil. Use 2 T batter for pancakes. 

Strawberry sauce:
Take 3/4 c of strawberries and 1 tsp of sugar and put them into a blender. Blend together and pour over pancakes. 
1/4 c of leftover strawberries go onto of pancakes. 

55 cal per 2 pancakes.  ENJOY!!!

1st post

okay so this blog i am super excited about!! This blog is going to have tons of recipes and fun ideas for around the house! Mostly just recipes but i will do my best to add on the other stuff. Other great part, i will not post anything that i have not done myself. So with each post i will post pictures on my creation at the end. Also if you guys have any ideas or tips feel free to post them or leave me a comment with what you did or if there is something you want me to try. This blog is all about growing to become better homemakers and just all around better people. The first recipe is on its way and will posted soon :)
